Of course at the end of the market time frame, I did not expect much to be left. Little did I know that the participants of MiMa are there rain or shine, and because the rain scared many away, I was able to check out a nice variety of home grown greens. I selected the salad mix and also purchased a fresh free range chicken breast that I thought might come in handy for a BBQ weekend such as this.
So when I got home, my friend Jen & I made an incredible “green smoothie”. I have to admit I questioned Jen when she told me that we were going to use the actual salad mix instead of my powdered greens for the drink. Yes, I doubted. Wow, was I wrong!
Jen’s expertise of fresh green smoothies, started off with 2 cups of water in my blender, then she stuffed the washed greens, added some of the beet greens that I had pulled to thin out my garden, a couple of bananas, a mix of frozen berries, a little fresh squeeze of lemon juice and viola!
Well, the point of my story…If you have not checked out the very wonderful people at the Highlands Micro Market, which is every Thursday, take the time to do so! You might be pleasantly surprised with a homemade salad dressing, cookie, or some fresh picked veggies & greens. Enjoy!
